<b><span style="font-size: large;">Crust Instructions:</span></b></div>
<div class="separator" style="clear: both; text-align: left;">
</div>
<ul style="text-align: left;">
<li><span style="font-size: large;">Mix all the dry ingredients in your food processor</span></li>
<li><span style="font-size: large;">Add butter to processor and mix until tiny butter chunks still exist</span></li>
<li><span style="font-size: large;">Add a little water at a time to processor until you can squish the mixture between your fingers and it sticks</span></li>
<li><span style="font-size: large;">Pour flour on a clean lightly flourered surface and roll mixture into a ball using your palms and then plastic wrap.</span></li>
<li><span style="font-size: large;">Place ball into refrigerator for at least 1 hour</span></li>
<li><span style="font-size: large;">Roll out ball on a clean flat surface, using a little flour so it will not stick</span></li>
<li><span style="font-size: large;">When the crust is about 1/4-1/2 mm thick, place on and flatten into your 9 inch glass pie dish</span></li>

<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">1 cup evaporated light vanilla silk soy milk (or milk, coconut milk, or condensced milk)**</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">1/2 cup packed dark
brown sugar</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">1/3 cup white sugar</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">1/2 teaspoon salt</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">2 eggs plus the yolk

<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">2 teaspoons of
cinnamon</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">1 teaspoon ground
ginger</span></li>
<li><span style="font-family: inherit; font-size: large; text-indent: 0.25in;">3/4 teaspoon garam masala (I used this to replace 1/4 nutmeg, 1/4 cloves, and 1/4 cardamom)</span></li>
</ul>
<div>
<span style="font-size: large;"> *I made my pumpkin <span style="text-indent: 24px;">purée from a small sugar pumpkin bought at a regular grocery store. As the pictures show you below, I cut the pumpkin in half and scrapped the seeds and strings out. I cooked my pumpkin halves with my pressure cooked. This only takes 5 minutes. Place a few inches of water in the bottom of the pressure cooker, put in pumpkin, cover pressure cooker, heat until you hear the whistle, reduce heat to medium, go for 5 minutes, turn off pressure cooker and let cool. Remove pumpkin and scrape the </span><span style="text-indent: 24px;">purée.</span></span></div>
<div>
<span style="font-size: large; text-indent: 24px;"><br /></span></div>
<div>
<span style="font-size: large; text-indent: 24px;">**Because I only had light vanilla silk soy milk on hand, I made my own evaporated milk. I took 3 cups of soy milk and brought to a boil in saucer; I reduced the heat to medium and then let the soy milk reduce half way. Turn off heat and add as much sugar as you like, sweeten to taste (approximately 1/2 cup to 1 cup white sugar). It is probably easier to just buy a can of evaporated milk (99 cents at regular grocery store).</span></div>

</div>
<ul style="text-align: left;">
<li><span style="font-size: large;">Preheat oven to 425 degrees</span></li>
<li><span style="font-family: inherit; font-size: large;">Mix sugars, salt, spices, beaten eggs, pumpkin purée, evaporated soy milk in a big bowl. Whisk all nicely together.</span></li>
<li><span style="font-family: inherit; font-size: large;">Fill your pie crust</span></li>
<li><span style="font-family: inherit; font-size: large;">Bake pie at 425 degree for 15 minutes</span></li>
<li><span style="font-family: inherit; font-size: large;">Reduce temperature to 350 degrees and bake for 60-65 minutes (or until a knife in the middle comes out clean)</span></li>
<li><span style="font-family: inherit; font-size: large;">Cool for at least 2 hours; the filling will proceed to harden as it cools</span></li>

<span style="font-family: Arial, Helvetica, sans-serif;">The reason for the elaborate possibilities of natto--hahaha, well only 3--is because of an episode of "chopped” on the food network that aired in the spring.<span style="mso-spacerun: yes;"> </span>One of the secret ingredients the chefs were supposed to use was natto.<span style="mso-spacerun: yes;"> </span>For all you peeps who are unaware of what natto is, it is fermented soy beans with a very strong yeasty, sticky, stringy texture—mixed with soy sauce, and sometimes spicy mustard/green onions/nori (dried seaweed).<span style="mso-spacerun: yes;"> </span>For the novice natto consumer, this tasty treat, that I could eat all day long, breakfast, lunch, and dinner, is quite a turn off.<span style="mso-spacerun: yes;"> </span>Conversely, natto is such a simple, nutritious, daily snack in Japanese culture.<span style="mso-spacerun: yes;"> </span>Some research even suggests that the components in natto fight cancer as well as provide other beneficial outcomes.<span style="mso-spacerun: yes;"> </span>I will not bore you with all the details, but natto also comes with a fascinating back-story…at least as my father tells it…here goes: long ago, when Samurais roamed the earth on horseback and carriages, one such Samurai’s wife sent him off traveling with homemade food.<span style="mso-spacerun: yes;"> </span>One such dish was cooked soy beans.<span style="mso-spacerun: yes;"> </span>Because it was so cold in the back of the carriage, as time passed, the soy beans turned into natto.<span style="mso-spacerun: yes;"> </span>Even though the Samurai thought the soy beans were rotten and inedible when he saw the stringy texture, and smelled the yeasty stench, he was so hungry from the long journey that he ate it anyway.<span style="mso-spacerun: yes;"> </span>To his pleasure, it was delicious.<span style="mso-spacerun: yes;"> </span>Of course I know now that this story is probably not true because the process of natto creation can take months underground in the winter (well there are factories nowadays that can do this quicker for us.)</span></div>
<div class="MsoNormal" style="margin: 0in 0in 0pt;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br />
</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Arial, Helvetica, sans-serif;"><span style="mso-ansi-language: EN-US; mso-bidi-language: AR-SA; mso-fareast-font-family: 'Times New Roman'; mso-fareast-language: EN-US;">Ok, back to my original reason for writing this post…in the episode of chopped, I was quite disturbed when all of the chefs on the show butchered the natto by grinding it up in a blender and placing a measly bit of it as sauce on the plate, so as not to offend the commoner’s pallet.<span style="mso-spacerun: yes;"> </span>A true natto connoisseur (which I do consider myself) would not have made such an offense.<span style="mso-spacerun: yes;"> </span>So here I present 3 ways you can try natto.<span style="mso-spacerun: yes;"> </span>Another way that is easy on the pallet for the novice is natto-maki, or natto sushi roles—less slime.<span style="mso-spacerun: yes;"> </span>You can also get dried natto in little packets without the slime or smell.<span style="mso-spacerun: yes;"> "</span>Americans" even eat a product called Tempeh, which is dried soybean clumps, quite similar to dried natto, the difference that I have seen is that dried natto comes like dried peanuts, and Tempeh comes in clumps of dried fermented soy beans.<span style="mso-spacerun: yes;"> </span>So I leave you with this thought, how can a chef be a true chef without knowing about natto?!?<span style="mso-spacerun: yes;"> </span>That is all I have to say about that at this time.</span> </span></div>

No problem! <br />
<br />
Just take all that rice, put in a large pot on the stove. Add 2-4 cups of water to the pot, depending on how chunky or smooth you like it. In this particular rice porridge, I added one chicken bouillon cube for every cup of water. <br />
<br />
However, you can make this vegetarian with veggie stock instead of water and bouillon cubes. <br />

<br />
Top with whatever ingredients you like, the rice porridge absorbs any flavors you add. <br />
<br />
I topped this porridge with green onions, cilantro, soy sauce drizzle, seven spice mix, red chili flakes. <br />
<br />
You can also add meat, veggies, etc. into the pot to simmer before serving if you like.</div></div><br />
You can also use this same method with day old rice!<br />
<br />
This dish is perfect for a cold, rainy afternoon such as the one today.Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-9049760291782846212011-05-11T15:57:00.000-07:002011-05-13T13:27:54.113-07:00Soba noodles with summer veggies<div dir="ltr" style="text-align: left;" trbidi="on"><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjJNP9Q8vQASE7nW60Kc3X1oHo_TI8PPcs1Uh4SNexlyLqPeuWDBqGAVoUUb0aOJyaARg17tn9Q4zf-zh-qufdgDxJEwgh8WDv9jxFO-NM5pSkATHOA80upbvy1WBTZN4doeKCR8sV09hw/s1600/DSC03610.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" j8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjJNP9Q8vQASE7nW60Kc3X1oHo_TI8PPcs1Uh4SNexlyLqPeuWDBqGAVoUUb0aOJyaARg17tn9Q4zf-zh-qufdgDxJEwgh8WDv9jxFO-NM5pSkATHOA80upbvy1WBTZN4doeKCR8sV09hw/s320/DSC03610.JPG" width="320px" /></a></div></div>Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-47823115319938797272011-05-11T15:54:00.000-07:002011-05-13T13:27:54.348-07:00Zucchini, Eggplant, Tofu Stir Fry<div dir="ltr" style="text-align: left;" trbidi="on"><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhmM51qwB9C4A17xb447KUgLfhjcqjy5gCxwb43-4YyjTVtG4NC-4vgcbpmrbLud8Z9fr-zr7bzQGVRBwsKab2TA5K_d79wXp39lxwx0RaKNqZ1hZbnm0AyDIxL-TxkPI4eIR8yDSSrEsM/s1600/DSC03612.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" j8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhmM51qwB9C4A17xb447KUgLfhjcqjy5gCxwb43-4YyjTVtG4NC-4vgcbpmrbLud8Z9fr-zr7bzQGVRBwsKab2TA5K_d79wXp39lxwx0RaKNqZ1hZbnm0AyDIxL-TxkPI4eIR8yDSSrEsM/s320/DSC03612.JPG" width="320px" /></a></div></div>Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-10786657992360632122011-05-11T15:52:00.000-07:002011-05-13T13:27:54.195-07:00Chicken Curry with Peas<div dir="ltr" style="text-align: left;" trbidi="on"><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhBNNXdsJ9RPLRSloppkFb-W3kGBMKiiYQ_cZoHyteFLCFq0Wd1OOhwyHettHLzTdj4GiKmsYBwFF5lLDxrWf2hBLY3JkF_M2UC4xRBvFg503bFYo8lY8FjIrLqpbQgeEoN-tBbAREh52M/s1600/DSC03600.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" j8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhBNNXdsJ9RPLRSloppkFb-W3kGBMKiiYQ_cZoHyteFLCFq0Wd1OOhwyHettHLzTdj4GiKmsYBwFF5lLDxrWf2hBLY3JkF_M2UC4xRBvFg503bFYo8lY8FjIrLqpbQgeEoN-tBbAREh52M/s320/DSC03600.JPG" width="320px" /></a></div></div>Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-61361547123034672292011-05-11T15:51:00.000-07:002011-05-13T13:27:54.253-07:00Beef Stew<div dir="ltr" style="text-align: left;" trbidi="on"><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhIhgnEQzXBYch4TVuo4QcLwSicpvjCisvA5TJ9_PfCN9uLYUH6JxSz5c2ZpNx_bmeZ0wiIK3J2DPO8rFSG1SWajGJsiJUba068aMLTFgVz7D9GalWpsiz1v4WWQcjoVcwDQd3xQG2MvlY/s1600/DSC03595.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" j8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhIhgnEQzXBYch4TVuo4QcLwSicpvjCisvA5TJ9_PfCN9uLYUH6JxSz5c2ZpNx_bmeZ0wiIK3J2DPO8rFSG1SWajGJsiJUba068aMLTFgVz7D9GalWpsiz1v4WWQcjoVcwDQd3xQG2MvlY/s320/DSC03595.JPG" width="320px" /></a></div></div>Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-42457183176908682262011-05-11T15:49:00.000-07:002011-05-13T13:27:54.151-07:00Tomato, Basil, and Garlic Pasta<div dir="ltr" style="text-align: left;" trbidi="on"><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhDUy61zFAwNjGaAgteT9Qvpz9ihUELt5qHS7cn2SsZ-VwBahQLF-m6mL6dLZBnJ5JcTJNvxif789QIUQJx-okVLflfSn1rNPb9EQFG52vmnlS5boz8DpeXY6r9Xzs0hyTtt8ztol54YJY/s1600/DSC03593.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" j8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhDUy61zFAwNjGaAgteT9Qvpz9ihUELt5qHS7cn2SsZ-VwBahQLF-m6mL6dLZBnJ5JcTJNvxif789QIUQJx-okVLflfSn1rNPb9EQFG52vmnlS5boz8DpeXY6r9Xzs0hyTtt8ztol54YJY/s320/DSC03593.JPG" width="320px" /></a></div></div>Amandahttp://www.blogger.com/profile/08329900822082890036noreply@blogger.com0tag:blogger.com,1999:blog-1395574270829044786.post-76589236982257906612011-04-25T22:22:00.000-07:002011-05-09T20:57:57.555-07:00Veggie Momos! I suppose you could use any sauce you like, such as a pot sticker sauce, or a gyoza sauce. Eat Momos after dipping in whatever sauce you like. <br />

Yup, my first pressure cooker...thank you Justin for the gift. </div><div class="MsoNormal" style="margin: 0in 0in 0pt;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgzKVKE463dc1ZpqSHRdJSQnvMXNwQw6iqwLjZEvCiYwhyzd7SQqWvXjFHuKHnEoBJlDE9j_5TeWOl7qfWpu128q5hm2GUOm-1bazDWcrmZXwxibqqWQuYyNueNpQoXgF3HKVLBFZBCCaI/s1600/DSC03578.JPG" imageanchor="1" style="cssfloat: left; margin-left: 1em; margin-right: 1em;"><img border="0" height="240px" i8="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgzKVKE463dc1ZpqSHRdJSQnvMXNwQw6iqwLjZEvCiYwhyzd7SQqWvXjFHuKHnEoBJlDE9j_5TeWOl7qfWpu128q5hm2GUOm-1bazDWcrmZXwxibqqWQuYyNueNpQoXgF3HKVLBFZBCCaI/s320/DSC03578.JPG" width="320px" /></a></div><div class="MsoNormal" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; margin: 0in 0in 0pt;">I am not sure how the pressure cooker works exactly (e.g. the technical details or the physics of it all), but gee, it does amazing things. In layman’s terms, you stick shit in it, and shit comes out cooked in a matter of minutes. </div><div class="MsoNormal" style="margin: 0in 0in 0pt;"><br />
</div><div class="MsoNormal" style="margin: 0in 0in 0pt;">This simple dish includes purple, red, and russet potatoes with peas, and green onions. Oh yeah, and did I mention the overcooked broccoli? Yes, I learned very quickly that you cannot put items with cooking times that are not equivalent in the pot at the same time, or else they turn into mush, or pesto-like coloring as in this dish. Aside from that minor problem, this dish actually tasted pretty good, and is quite pretty if I do say so myself. </div><div class="MsoNormal" style="margin: 0in 0in 0pt;"><br />
</div><div class="MsoNormal" style="margin: 0in 0in 0pt;">The spices include curry powder, salt, pepper, cumin seeds, and garam masala. All I did was chop up the ingredients, throw them in the pressure cooker, with a 1/2 cup of water, and the spices. Place the pressure cooker on the stove on high until it is a "whistle blower" hehehe, turn the heat to low and cook for 2 1/2 minutes. Turn the stove off, and allow for all the pressure to release. Out pops some yummy goodness as this picture obviously depicts!<br />
